Stuffed Pepper Soup:
- 1 cup rice (prepare with water amount recommended)
- 1 pound ground beef
- 2 cups frozen chopped green peppers, thawed
- 1 cup chopped onion
- 1 jar spaghetti sauce
- 1 can diced tomatoes, undrained
- 1 can (14 ounces) beef broth
Prepare rice according to package directions. Meanwhile, in a large saucepan, cook the beef, green peppers and onion until meat is no longer pink; drain. Stir in the spaghetti sauce, tomatoes, broth and prepared rice; heat through.
As you can see this is a super fast and easy recipe to prepare! You may use white, brown or long grain rice; they all taste great in this soup. I sprinkle a little parmesan cheese on top of the soup before serving.

ReplyDeleteI love making soups/stews this time of year. I usually end up making beef stew, tuscan soup, or something I make up using leftover roast.:)
Yes! It's called "Amish Cheese Soup". Its a potato soup with cream of mushroom soup and velveteen cheese melted in it. We add boiled or steamed shrimp sometimes and it is so good!!!!
ReplyDeleteLooks very good, hoping to get a good crop of peppers this year in the garden. Have to give this one a try next winter, we love stuffed peppers. Our favorite winter soups have been chicken noodle, vegetable beef and chili.
ReplyDeleteI recently made a "no recipe" soup out of some good beef broth, celery, onion, garlic, carrots, and brussels sprouts. It was delicious!
