Chocolate Granola

Last month I shared that I had made homemade chocolate granola for the first time in this post. One of my sweet readers, Cheryl, requested that I share my recipe.

Chocolate Granola:

4 cups rolled oats
1 cup shredded unsweetened coconut
1 cup chopped pecans (or your choice of nuts)
1/2 cup chia seeds
1/2 tsp. salt
1/2 cup cocoa
1/3 cup melted coconut oil
1/2 tsp. vanilla
1/3 cup honey
1/4 cup brown sugar

Directions: Preheat oven to 325 degree Fahrenheit. Combine rolled oats, coconut, pecans, chia seeds and salt in one bowl. In a separate bowl combine cocoa, coconut oil, vanilla, honey and brown sugar. Then combine the rolled oats mixture with the cocoa mixture, mix well. Pour granola onto a greased cookie sheet. Bake for 15 minutes then stir. Bake an additional 10-15 minutes. Allow to completely cool and do not stir granola until completely cooled.

I hope you will enjoy this recipe. It is perfect combined with homemade yogurt!

The Enchanting Rose Tea Cup Exchange

 Each spring and fall Stephanie from The Enchanting Rose hosts a tea cup exchange. Over the past few years I have enjoyed reading about this exchange and the lovely friendships that have begun through it. When Stephanie invited her readers to join this spring I decided to sign up, and I am so glad I did! : )

My box came from a very sweet young lady named Sarah. Included in the package was a nice handwritten letter, and I was amazed to see just how much we had in common! Sarah happens to be a seamstress too, her Etsy shop is Prairie Rose Sewing. Sarah had read my blog and was so sweet to find items that she knew I would enjoy. I was truly blessed by her thoughtfulness and generosity!
 Roses are one of my favorite flowers! I was delighted with this beautiful teacup, saucer and dessert plate set. Sarah also included a lovely variety of teas and a delicious chocolate bar.
 Being a fellow seamstress Sarah included some lovely sewing inspiration. : ) An adorable dress pattern, a pillowcase set to be embroidered and 5 yards of satin.
 A sweet set of hummingbird note cards and a journal...
A "Taste of Home Cookbook" which I have already enjoyed looking through and two counted cross-stitch designs for my kitchen.

 Through the exchange I was given the address of a sweet lady named Ruth. She mentioned that she enjoyed baking pies and homemaking. It was a truly a pleasure for me to put together a package of some tea time fun. I included a few handmade items - an apron, tea napkins, a dishtowel, doily and lavender soap (which was made by Adam).
 I was truly impressed with Stephanie's organization of this event! Her ability to match up so many ladies and bless them through this exchange is amazing! Thank you, Stephanie for all your hard work! You are a blessing to all of us who enjoy your blog. : )
