This past Christmas my mother gave me the cookbook “Cooking with Praise”. As soon as I began to flip through the pages of this cookbook I knew it was to be a favorite!
There is a section of healthy recipes. And it is in this particular section I discovered a new family favorite- “High Fiber Snacks”. Please do not allow the title to give you the wrong impression; these are truly a delicious snack. Since first preparing this recipe soon after Christmas a week has not passed where I have not made 1-2 batches!
So far all of the recipes I have prepared from this cookbook have been wonderful! Some of my other favorites are the maple cocoa recipe, bread recipe and baked oatmeal recipe.
Another aspect of this cookbook I have really enjoyed is at the beginning of each chapter the lyrics and music of a hymn is printed! Also, at the bottom of many of the pages you will find an encouraging quote or scripture.

"High Fiber Snack"
3 cup oatmeal
1/2 cup whole wheat flour
1/4 tsp. salt
1/2 cup chocolate chips (I have been adding raisins in place of the chocolate chips)
1/2 cup chopped walnuts
coconut (I generally just throw in a handful)
1 cup peanut butter
1 cup honey
Mix oatmeal, flour, salt, chocolate chips, coconut and walnuts well. Mix peanut butter and honey in a separate bowl. Combine the 2 mixtures and form balls or press in 9"x13" pan and cut into bars. Enjoy!
