Sunny Lemon Pie

Over the weekend I tried a new recipe my mom discovered; Sunny Lemon Pie. We all thought it was a tasty and refreshing summer treat!

Sunny Lemon Pie-
Ingredients
  • 1 (4-serving size) package lemon pie filling, cooked according to the package directions
  • 1/4 cup (½ stick) butter
  • 2 tablespoons lemon juice
  • 1 1/2 teaspoons grated lemon peel
  • 1 cup sour cream
  • 1 (9-inch) graham cracker pie crust
  • 2 cups frozen whipped topping, thawed (I made my own whipped cream)
Instructions
  1. While lemon pie filling is still hot, add butter, lemon juice, and lemon peel; stir until butter is melted. Add sour cream; mix well.
     
  2. Pour mixture into pie crust and chill for at least 2 hours, or until set. Completely cover top of pie with whipped topping and serve, or cover loosely and chill until ready to serve.

Books

Over the weekend my fiancé Adam and I found some wonderful books at an estate sale. For quite a few years now I have enjoyed the books of E.D.E.N. Southworth. Each book is filled with mystery, excitement, adventure and romance. Of all the books I have read none can rival Mrs. Southworth in imaginative originality. However I found that her books can be difficult to find, and once found sometime a little expensive. I really felt like we discovered a treasure this weekend when we found 5 E.D.E.N Southworth books, each priced at 50 cents.

                  As are these two! Just too much excitement for one book to contain. : )


Have any of you  read a Mrs. Georgie Sheldon book? I have not, but found these two books at the estate sale.

Also over the weekend I completed the crocheted rug I was working on. I hope in the near future to blog about how I have made the rug. It is a great way to utilize scrap fabric, and truly an enjoyable project!
