Banana Bread



"Best Ever Banana Bread Recipe"
from Gold Medal Flour
1 1/4 cups sugar
1/2 cup butter or 1/2 cup margarine, softened
2 eggs
1 1/2 cups mashed very ripe bananas (3-4 medium)
1/2 cup buttermilk
1 teaspoon vanilla
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup chopped nuts, if desired

Directions:

Heat oven to 350 degrees. Grease bottoms only of 2 (8X4 inch) loaf pans.

In large bowl, mix sugar and butter. Add eggs, bananas (increase recipe by one banana), buttermilk and vanilla; beat with electric mixer on medium speed until smooth.

Stir in flour, baking soda, salt and nuts (if using) just until moistened. Pour batter into pans.

Bake for one hour or until toothpick inserted in center comes out clean. Cool 10 minutes. Loosen sides of loaves from pans; remove from pans to cooling rack. Cool about 1 hour before slicing.


Over the weekend I baked a loaf of banana bread, one of Adam's favorites. Over the years I have tried several different recipes, but have to agree that this is the "best".

  3. Mmm... yum! I love banana bread, but without the nuts. Nuts don't seem to agree with me so I often leave them out. Thanks for sharing and will certainly have to try sometime.

  4. I love any kind of sweet bread and I don't think I have ever tried this one. I just love the smell of the bread when you pull it out of the oven. Isn't it just so inviting?! Yum-Yum.

  5. Hello Dear Sarah, I made some banana bread yesterday! It is half gone tonight! It tasted so good with a glass of ice cold milk! I am not sure what I added because I just made it from memory,. I know, I guess that's what happens when you have made it as many times as I have. The walnuts I added were so good.The only thing is, it only makes one loaf, and it is so dense it takes such a long time to bake.

    1. PS I made this today and was thrilled at how well the bread turned out. I used coconut sugar instead of standard sugar and greek yoghurt instead of buttermilk (as I didn't have any) and it was delicious. Even my daughter-in-law loved it and asked for the recipe. So moist. Plan to make it again for sure:))
